Low-Carb Cherry Ripe Chocolate Bark

This simple recipe takes less than five minutes from start to finish – and needs just a few minutes in the fridge or freezer to set! It’s perfect for those times you need to take something to a social event and you don’t want to load up on sugar-filled junk.  

There are so many other flavour combinations you can try, that’s only limited by your imagination – Add rum essence with dried shredded coconut, or caramel flavouring plus peanuts, or orange essence and cocoa nibs, or even rosewater essence with slivered almonds…. YUM!

 

Ingredients

100g 90% or 95% cocoa chocolate (I use Lindt brand)

¼ cup desiccated coconut

½ cup flaked or slivered almonds

20 drops cherry flavoured stevia

Method

Line a small, shallow tray with baking paper.  Melt the chocolate in a microwave-safe bowl or jug on medium power for about two minutes, stopping and stirring the chocolate every thirty seconds, until smooth.  Add remaining ingredients to the melted chocolate and stir until well combined.  Spoon mixture onto the lined tray and spread out evenly until about 3mm thick.  Chill in the refrigerator for about one hour or 20 minutes in the freezer.  Remove and break into bite-sized pieces.  Store in an airtight container in the fridge.
