These waffles not only taste great, but you can make them sweet or savoury. I made them today and topped one with jalapeno cheese & sliced ham (amazing!), but you could just as easily add a bit of sweetener to the batter then top with strawberries and cream.
I make them into waffles but if you don’t have a waffle maker, you could just as easily turn them into pancakes. Make sure you preheat the waffle maker or frypan well and spray with a bit of oil before adding the batter.
Ingredients
2 eggs (room temperature)
2 tablespoons coconut flour
1 tablespoon almond meal
2 tablespoons grated mozzarella cheese
½ teaspoon dried active yeast dissolved in 2 tablespoons warm water (not necessary but adds to flavour)
½ teaspoon baking powder
Method
Add eggs to a mixing bowl and beat for 20 seconds. Add other ingredients and stir to combine. Let the batter sit for a few minutes for the yeast to activate, then cook in the waffle maker or frypan. This recipe makes 2 full-sized waffles in my waffle maker.
Add topping of choice and enjoy!
